Jackson tapped home following a deflected low cross by Raheem Sterling in the 75th minute to wrap up a 3-0 win at Stamford Bridge.
Sterling had earlier scored twice himself to put the Blues in control against last season's Championship play-off winners.
This was Chelsea's first win in a competitive match since appointing Mauricio Pochettino as manager earlier this summer.
Pochettino's Chelsea had drawn 1-1 with Liverpool in their EPL opener before losing 3-1 at West Ham last weekend.
Jackson cost Chelsea a transfer fee in the region of £32 million when he moved to Stamford Bridge from Villarreal in June.
